Tarator Recipe (Cold Summer Soup)
½ Cucumber, peeled
1 ½ cups plain greek yogurt
A few cloves garlic
Salt to taste
Water
Optional: Dill and walnuts
Mince the garlic very finely and chop the cucumber into tiny pieces.
Add the yogurt, garlic and cucumber to a bowl.
Season with some salt (not too much at this point) and mix all the ingredients.
Add a little bit of water at a time and mix until you reach your desired consistency. Taste for seasoning.
Optional: add dill and chopped up walnuts.
Keep refrigerated until you’re ready to serve.
Tarator is a very popular summer soup in Bulgaria and some other eastern European countries. It is very similar to tzatziki sauce. During a hot summer day, tarator is a perfect light meal that is refreshing, healthy and hydrating. When it comes to proportions you really don’t need to measure anything. Just try it out and figure out what consistency you prefer. Maybe more cucumber and less water…it doesn’t matter! This soup is virtually impossible to mess up. As Chef John would say, you’re the boss of your tarator!
